Proses Pembuatan Manisan Terong

Terung (Solanum melongena, di Pulau Jawa lebih dikenal sebagai terong) ialah flora penghasil buah yang dijadikan sayur-sayuran. Asalnya ialah India dan Sri Lanka. Terung berkerabat akrab dengan kentang dan leunca, dan agak jauh dari tomat. Terung ialah terna yang sering ditanam secara tahunan. Tanaman ini tumbuh hingga 40-150 cm (16-57 inci) tingginya. Daunnya besar, dengan lobus yang kasar. Ukurannya 10-20 cm (4-8 inci) panjangnya dan 5-10 cm (2-4 inci) lebarnya. Jenis-jenis setengah liar lebih besar dan tumbuh hingga setinggi 225 cm (7 kaki), dengan daun yang melebihi 30 cm (12 inci) dan 15 cm (6 inci) panjangnya. Batangnya biasanya berduri. Warna bunganya antara putih hingga ungu, dengan mahkota yang mempunyai lima lobus. Benang sarinya berwarna kuning. Dalam keseharian kita, biasanya terong dipakai sebagai sayuran. Namun kali ini Blog TerapanTTG ingin membahas salah satu cara memanfaatkan terong menjadi sumber pendapatan yaitu dengan menimbulkan terong sebagai manisan yang bisa dijual.

Dalam menciptakan Manisan Terong kali ini kita akan memakai Gula putih sebagai pemanis. Dalam pembuatan Manisan Terong, perbandingan terong segar dengan gula pasir yang dipakai ialah 1 : 1, sehingga sangat besar lengan berkuasa pada performa manisan terong yang dihasilkan. Penggunaaan gula putih dalam pembuatan manisan terong selain sebagai komplemen juga berfungsi sebagai materi pengawet.


Adapun alat dan materi yang dipakai dalam pembuatan manisan terong ialah sebagai berikut :

Alat – alat yang dipakai :
• Pisau
• Baskom
• Panci
• Kompor
• Pengaduk (sendok)
• Serbet
• Sendok makan
• Garpu

Bahan  yang dipakai :
• Terong 3 kg
• Gula putih 3 kg
• Kapur sirih 3 sdm
• Air higienis 6 gelas
• Asam citrus 3 sdm

Berikut Cara Pembuatan Manisan Terong ialah sebagai berikut :
  1. Pilih terong yang berkualitas dan masih muda (belum ada biji) untuk menambah kualitas manisan itu sendiri, terong yang di gunakan disini yaitu terong ungu.
  2. Kemudian terong dibuang tangkainya
  3. Terong di tusuk-tusuk memakai garpu hingga rata untuk memudahkan air meresap saat proses perendaman nanti.
  4. Setelah terong ditusuk-tusuk, terong direndaman lebih kurang 12 jam menggunakanair larutan kapur sirih
  5. Setelah itu terong diangkat dan dicuci hingga bersih
  6. Setelah terong dicuci bersih, terong diris sebesar dadu atau sesuai selerah
  7. Sementara terong diiris, larutkan gula, asam citrus dan air putih
  8. Setelah larutan gula sudah mendidih ±300 cc , masukan terong yang telah diiris tadi.
  9. Tunggu hingga air larutan gula tadi tinggal sedikit
  10. Angkat terong dan tiriskan lalu di jemur hingga kering, untuk hasil optimal sesudah dijemur diterik matahari terong diopen kembali memakai openpengering.
  11. Pengemasan
  12. Manisan terong siap di pasarkan.
