Proses Pembuatan Abon Ikan

Masih terkait postingan sebelumnya dimana blog Terapan Teknologi Tepat Guna telah memposting Proses Pembuatan Abon Daging, maka kali ini akan saya coba posting yang serupa namun dengan materi dasar ikan. Abon ikan banyak kita jumpai dijual dipasaran dengan bermacam-macam jenis ikan sebagai materi dasar dan dengan harga yang bervariasi pula.

Abon ikan merupakan produk yang memadukan cara pengawetan ikan dengan perebusan atau pengukusan, penambahan bumbu – bumbu tertentu dan penggorengan. Produk ini memiliki tekstur yang lembut rasa dan aroma yang khas, baon ikan sanggup dipakai untuk lauk makan nasi =, sobat makan roti maupun sebagai isi pada beberapa makanan kecil.

Umumnya abon ikan dibentuk dari daging ikan cakalang, tongkol,  tuna, lele, patin dan ikan cucut, akan tetapi di dalam pembahasan ini kita memakai materi daging IKAN PATIN (sumber artikel ini memakai jenis ikan patin, jadi kita ikuti saja semoga tidak salah dalam penyampaian materinya) 

Pemilihan Ikan.
Ikan patin yang baik dibentuk abon ikan patin yaitu yang berusia +- 8 bulan keatas dengan berat lebih kurang 7 ons. Kondisi ini juga berlaku jikalau dalam pembuatan abon ikan ini Anda memakai ikan jenis lain.

Bumbu – bumbu
Untuk tiap 100 kg ikan patin (bisa juga daging ikan lainnya tergantung kawasan Anda banyak tersedia ikan jenis apa) yaitu sebagai berikut :
Garam 1,5 kg
Gula 15 kg
Ketumbar 0,3 kg
Bawang merah 2 kg
Bawang putih 1,6 kg
Minyak goreng 20 kg (boleh ditiadakan)
Asam 0,9 kg
Jahe 0,1 kg
Serai / kamijara secukupnya
Daun salam secukupnya
Laos 0,1 kg

Selain bumbu diatas, dalam pembuatan abon ikan kadang – kadang dipakai pula santan kelapa yang kental, tetapi abon tidak akan bertahan usang dan jikalau disimpan biasanya gampang menjadi tengik.

Langkah Pembuatan Abon Ikan Patin, sanggup dijabarkan sebagai berikut :

Penyiangan
Ikan disiangi dengan dibuang isi dalam perut dan dipotong – potong melintang untuk memudahkan pengukusan, lalu basuh hingga bersih

Pengukusan
Ikan dikukus hingga matang (untuk memudahkan pengambilan daging dan memisahkan dari tulang). selanjutnya Daging ikan dicabik cabik – cabik, lalu ditumbuk hingga menjadi kepingan – kepingan yang halus

Pemberian Bumbu
Bumbu – bumbu dihaluskan lebih dahulu, lalu dicampurkan dengan daging yang telah berbentuk kepingan hingga merata

Penggorengan. 
Daging ikan yang telah dicampur dengan bumbu lalu digoreng dengan minyak atau tanpa minyak hingga diaduk – aduk supaya supaya tidak hangus. Apabila memakai minyak, daging ikan harus seluruhnya terendam semoga diperoleh abon yang kering dan renyah. Penggorengan tidak boleh saat abon telah berwarna kuning kecoklatan
 
Pengepresan. 
Setelah diangkat dari wajan, abon dimasukkanke dalam alat pres dan ditekan – tekan hingga minyak nya habis keluar. Kemudian abon dikeluarkan dengan memakai garpu. Untuk menghasilkan aroma (bau) dan rasa yang enak sanggup ditambahkan bawang gireng pada abon yang telah matang

Pengemasan. 
Setelah dingin, abon dikemas di dalam kantung plastik atau kertas minyak. Peningkatan daya simpan akan diperoleh jikalau dipakai pembungkus hampa udara.

Potensi bisnis pembuatan abon ikan patin
Dengan harga ditingkat konsumen mencapai 25 ribu rupiah per ons-nya ditambah ongkos produksi yang tidak begitu besar menciptakan perjuangan pembuatan abon ikan patin sanggup menjadi alternatif bisnis bagi kita semua.
