Tahu yakni kuliner yang dibentuk dari kacang kedelai yang difermentasikan dan diambil sarinya. Berbeda dengan tempe yang orisinil dari Indonesia, tahu berasal dari Cina, menyerupai halnya kecap, tauco, bakpau, dan bakso. Tahu yakni kata serapan dari bahasa Hokkian (tauhu) (Hanzi: 豆腐, hanyu pinyin: doufu) yang secara harfiah berarti "kedelai yang difermentasi". Tahu pertama kali muncul di Tiongkok semenjak zaman Dinasti Han sekitar 2200 tahun lalu. Penemunya yakni Liu An (Hanzi: 劉安) yang merupakan seorang bangsawan, cucu dari Kaisar Han Gaozu, Liu Bang yang mendirikan Dinasti Han.
Di Jepang dikenal dengan nama tofu. Dibawa para perantau China, kuliner ini menyebar ke Asia Timur dan Asia Tenggara, kemudian juga kesannya ke seluruh dunia. Di Kediri tahu kuning menjadi kuliner khas. Ada pula mengenai sejarah tahu kuning. Sebagaimana tempe, tahu dikenal sebagai kuliner rakyat. Secara Garis Besar Proses Pembuatan Tahu dapat aku jabarkan sebagai berikut :

  • Plih kedelai yang higienis dan besar ukurannya, kemudian basuh hingga bersih. 
  • Rendam kedelai dalam air higienis selama 8 jam, Usahakan seluruh kedelai tenggelam. Dalam proses perendaman ini kedelai akan mengembang. 
  • Bersihkan kembali kedelai dengan cara dicuci berkali kali. Usahakan kedelai ini sebersih mungkin untuk menghindari kedelai cepat masam. 
  • Hancurkan kedelai dengan cara ditumbuk dan secara perlahan tambahkan air sedikit-demi sedikit sehingga kedelainya berbentuk bubur. 
  • Masak bubur kedelai dengan hati-hati pada suhu 70-80 derajat (biasanya ditandai dengan gelembung kecil yang muncul pada kedelai yang dimasak). Ingat untuk menjaga supaya kedelai jangan hingga mengental. 
  • Saring bubur kedelai tersebut bersama kerikil tahu atau asam cukup, sambil diaduk secara perlahan. Proses ini akan menghasilkan endapan tahu (gumpalan). 
  • Endapan itu kemudian siap untuk di press dan di cetak sesuai ukuran dan impian anda
  • Taruh di dalam cetakan, kemudian taruh pemberat yang berfungsi untuk menekan ampas supaya kandungan airnya benar-benar habis.
  • Keluarkan tahu dari cetakan, potong sesuai selera, dan siap dikonsumsi
